Baked Oatmeal As the days get cooler a desire for warm and filling food begins to infiltrate our thoughts and tummies. and baked oatmeal is a great solution to these pesky cravings, plus it’ll keep you going all morning. You’ll need:
3 cups rolled oats
1 cup brown sugar as well as extra for garnish
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
1/2 cup melted butter
2 teaspoons vanilla extract
Step One; Preheat oven to 350°
Step Two; Mix together the oats, brown sugar, cinnamon, baking powder, and salt in a large bowl.
Step Three; On medium speed, beat in the milk, eggs, melted butter, and vanilla extract.
Step Four; Pour into a lightly greased 9x13 baking dish and bake for 40 minutes.
Step five; Cut into squares and serve with steamed milk and extra brown sugar.
Wanna spice things up? Stir in 3/4 cup of any dried fruit you like. OR top with slices of fresh fruit (don’t mix in the fresh fruit because it tends to make the oatmeal soggy when it sits in the fridge). OR stir in 3/4 cup of your favorite nut all chopped up. OR make it extra special Fall-ish by replacing the eggs with 1/3 cup of pumpkin puree! OR do any combination of this because it’s fabulous no matter what.
